Meet your culinary partner

Hideki was born and raised among the sights and tastes of Hokkaido, a Japanese province rich in ancient food traditions closely bound to the seasons and rhythms of nature.
Enamoured by the beauty and flavours of his homeland, he went on to train as a chef under Murata Yoshihiro in Kikunoi Roan, a Michelin starred kaiseki restaurant in Kyoto. Kaiseki, the most refined dining experience in Japan, is a traditional dinner made up of small, seasonal plates, meticulously prepared and served with deep sincerity.
Having mastered the art and discipline of kaiseki, Hideki became head chef at Kikunoi Roan.
He then spent over a decade in the United Kingdom, curating beautiful, seasonal dishes for some of the country’s finest Japanese establishments. While upholding the impeccable attention to detail and work ethic of his cultural heritage, Hideki is also warm and personable, truly at ease with western etiquette, convention, and culture.
